What is Sambar Masala?
Sambar Masala is the signature South Indian spice blend used to flavour sambar — the lentil-and-vegetable stew that forms the backbone of Tamil, Kerala, Karnataka, and Andhra cuisine. Every household has its own blend, but ours follows the classical Kerala formula: toor dal and chana dal as the earthy base, coriander for aroma, red chillies for heat, fenugreek for depth, and curry leaves for the signature South Indian character.
What’s inside — the classical Kerala blend
- Coriander seeds (foundation aroma)
- Toor dal (arhar dal) and chana dal (nutty earthy base)
- Dried red chillies (gentle heat)
- Cumin seeds
- Fenugreek seeds (depth and slight bitterness)
- Black pepper
- Mustard seeds
- Curry leaves
- Turmeric (for colour and warmth)
- Asafoetida (classical digestive aid)
All ingredients are dry-roasted individually to release aromas, then ground fresh in small batches. No fillers, no artificial flavours, no MSG.
How to use
For a basic sambar serving 4:
- Cook 1/2 cup toor dal with 1/2 tsp turmeric until soft
- Boil vegetables (drumstick, pumpkin, carrot, brinjal) with tamarind water
- Add the cooked dal + 2 tsp sambar masala + salt
- Finish with a tempering of mustard seeds, curry leaves, dried red chilli, and a pinch of hing in ghee/coconut oil
- Simmer 5 minutes and serve with rice, idli, dosa, or vada
Also use in: kootu, mixed-vegetable gravies, lentil soups, South Indian-style vegetable stews.
Why Kerala sambar masala is different
Unlike Tamil Nadu sambar masala (which emphasises coriander and chilli), the Kerala version includes more pepper and curry leaves — reflecting the state’s own spice geography. The result is a slightly sharper, more aromatic profile that pairs beautifully with coconut-based South Indian vegetables.
How to store
Keep in an airtight glass or steel jar away from heat, sunlight, and moisture. Avoid using a wet spoon. Ground masalas lose aroma faster than whole spices — use within 6 months for best flavour. Smell it first: if the aroma has faded, it is time for a fresh pack.

Frequently asked questions
What is sambar masala used for?
Primarily for making sambar — the South Indian lentil and vegetable stew eaten with rice, idli, dosa, or vada. Also used in kootu, mixed-vegetable curries, and South Indian lentil soups.
How much sambar masala per serving?
For sambar serving 4 people: 1.5 to 2 teaspoons. Adjust to taste — start with less, add more if you want stronger flavour. Different brands have different heat levels.
Is this sambar masala spicy?
Medium heat — enough to taste the chilli but not overwhelming. The real character comes from coriander, fenugreek, and curry leaves, not just chilli.
Can I use sambar masala instead of garam masala?
No — they are different blends for different cuisines. Sambar masala is South Indian (coriander-fenugreek-chilli base). Garam masala is North Indian (cinnamon-clove-cardamom base).
Is sambar masala healthy?
Yes — it is made from traditional digestive spices (cumin, fenugreek, asafoetida, turmeric) that have been used in South Indian cooking for centuries. No MSG, no artificial colour, no preservatives in our blend.
How long does sambar masala last after opening?
Once opened, use within 4-6 months for best aroma. Ground masalas lose intensity faster than whole spices. Store in a tightly sealed jar away from heat and moisture.
Can I make sambar masala from scratch?
Yes — but it requires 10+ ingredients, dry-roasting each one, cooling, and grinding in exactly the right proportions. For most home cooks, a fresh ready-made blend saves 30+ minutes per sambar.
