Kerala White Pepper — the colour-sensitive cook’s choice
White pepper comes from the same plant as black pepper (Piper nigrum) — but harvested ripe, with the dark outer skin removed through controlled soaking and rubbing. The result is the inner cream-coloured kernel with a milder, earthier, more muted flavour than black pepper’s sharp citrus-pine punch.
When to use white pepper instead of black
- Light-coloured sauces: Béchamel, Alfredo, cheese sauces — where black specks would look out of place.
- Cream soups: Mushroom, cauliflower, potato soups.
- Mashed potatoes: Smooth white finish.
- Chinese cooking: White pepper is the standard in Cantonese and Sichuan hot-and-sour soup.
- Fish dishes: Light-coloured fish presentations where you want pepper flavour without visible specks.
Flavour differences
White pepper is milder-hotter with earthier, slightly fermented notes (from the processing). Black pepper is sharper-brighter-citrus. For dishes where you want the pepper to blend quietly, use white. For dishes where you want pepper to stand out, use black.
How to use
Grinding: Keep a separate white pepper mill. Freshly cracked makes the most difference.
Powder: White pepper powder is often used pre-ground in Chinese cooking — fresh is better but ground works.
Amount: Use 1.5× the quantity of black pepper for equivalent heat (white is slightly milder).
Storage
Whole peppercorns: airtight glass jar, cool dark place. 2 years. Ground: 4 months peak aroma.
FAQ
Is white pepper hotter than black? Slightly milder actually — but with a different, more earthy heat profile.
Can I substitute black for white? Yes for flavour, but the dish will have visible black specks.
Why does white pepper smell different? The soaking-fermentation step in processing creates its earthier character. Normal.
Is white pepper healthier than black? Both are nutritionally similar. Black has slightly higher piperine (the bioactive compound).
